Healthy Omelet!! Just make an omelet with 1 egg, 2 whites. Or all whites, if you want to make it even lighter. Add in sauteed mushrooms, onions, bell peppers, chopped tomatoes -- whatever veggies you like. You can add a little fat free shredded cheddar if you want. Cook in a tiny drizzle of olive oil or a small amount of light butter. Pair with fruit or yogurt.
