Do I have a great wife or what? On Valentine's Day, she made an incredible Pulled Pork. Take a 7 lbs pork shoulder and rub it with red curry paste. Slice one onion and place the slices in the bottom of crock pot. Place pork shoulder on top of onions, cover and refrigerate over night. In the morning, take one can of plain coconut water and pour it into the crock pot. Then, turn the crock pot on low and cook all day, at least 8 hours.   Place on platter and enjoy!
