Matteuccia struthiopteris - Ostrich Fern : Planted, established and naturalizing the yard, 8 years and counting : Sun/Shade : 3-8' height - 3-8' spread : Fiddle-heads are edible in moderation
(July 2013 - *Pinner's Note* Ostrich Fern is edible in fiddlehead/young, coiled, sterile, frond form. See link for how to choose, handle and cook the fiddleheads. Tastes like asparagus. Excellent in pasta dishes or pickled in vinegar and oil.)
Ostrich ferns (Matteuccia struthiopteris) can be grown for their delicious, early Spring fiddleheads, which are a coveted delicacy in fine dining restaurants nationwide. (Fiddleheads pictured at the top.) They love cool, shady spots and are very hardy from Zones 2-8.
