Eggplant Sticks 1. Slice an eggplant into sticks however you want. (very large eggplant = about 40 sticks) 2. Set up 3 bowls. First bowl: 1/2 c flour Second bowl: 2 eggs, beaten Third bowl: 3/4 c bread crumbs, 1/2 c shredded Parm, oregano 3. Spray a drying rack with nonstick spray, place it inside a baking sheet. 4. Dip the sticks in the first, second, then third bowls. Line them up on the rack. 5. Bake at 425F (about 220C) for around 10 minutes. You get a bunch of super crispy "fries"!
