The best 3 bean salad - 1 - 15 oz can black beans 1 - 15 oz can kidney beans 1 - 15 oz can cannellini beans 2 peppers chopped (I used about 2/3 of a red, orange and yellow pepper, you can also use green) 1 red onion finely chopped 1/4 c olive oil 1/4 c red wine vinegar 2 T lime juice (fresh is best) 1 T lemon juice 1 T salt 1 clove crushed garlic 1 bunch of chopped cilantro chili powder and pepper to taste
I got hungry for 3 bean salad one day about 20 years ago and couldn’t find a good recipe so I made my own. It turned out so good that I haven’t bothered to make any other since. It is even better if it is made the day before so it is perfect to make ahead for Sunday dinner so that you can enjoy the extra time with your guests.
SW Black Bean Salad - •15.5 oz can rinsed & drained black beans•9 oz cooked corn, frozen•1 chopped tomato•1/3 C chopped red onion•1 chopped scallion•1 1/2 - 2 juice of limes•1 T EVOO•2 T cilantro •salt & pepper•1 diced avocado: Mix beans, corn, tomato, onion, scallion, cilantro, salt & pepper. Squeeze fresh lime juice to taste & stir in EVOO. Chill-30 minutes. Add avocado.
