Vankaya Gasagasala Kura / Eggplant Poppy Seeds Curry -- looks so decadent yet prep is relatively simple. Besides the spices, this uses poppy seeds for the gravy. Subbing with tahini/cashew nuts since I can't get poppy seeds. Also thinking of roasting the eggplant slices instead of frying them for a heart healthy version.
