Apple Salsa: 2 large crisp apples, diced; 1/2 cup red bell pepper, diced; 2 limes, juiced; 1 tsp. honey; 1/4 cup cilantro, chopped; 1/3 cup red onion, diced; 1/2 jalapeno, seeded and minced; salt and freshly ground black pepper, to taste; DIRECTIONS: In a medium bowl, combine apples, bell pepper, cilantro, onion, and jalapeno. Drizzle with lime juice and honey. Toss to coat. Season with salt and pepper to taste.
