Smoked Armadillo Eggs Recipe a.k.a Jalapeno Popper Wrapped and Covered in Sausage . I don't have a smoker so I'm just baking them in my oven like a basic Baked Scotch Egg (which are amazing, too!)

Armadillo Eggs (Learned from Katrina in Dallas, TX) 1pkg Shredded Pepper Jack Cheese 1/2lb Sausage 1 can Jalepenos 1 egg 1 pkg Pork Shake n Bake Make a slit in each jalepeno. Stuff with cheese. Mix together Bisquick, sausage and milk. Wrap each stuffed pepper in sausage dough. Roll in beaten egg. Roll in Shake n Bake. Bake on lined cookie sheet at 325 degrees for 25 minutes. Spicy and Tasty!
