Avocado Pesto Pasta For 2: 4 oz pasta, 1/2 avocado, 3/4 cup basil, little less than 3 T pine nuts, 2.5 T fresh parmesan, 1 T lemon juice, pinch salt, 2 T garlic olive oil (or plain OO + 1 clove garlic). Used 1 medium-large tomato diced large. Toss pasta into sauce, put in 2 bowls (didnt need pasta water) Add tomatoes and parmesan on top. Might need another pinch of salt as well
