Roasted beet and garlic soup: very good and so easy to make. This is the second Whole Living soup I've made that incorporates a bunch of roasted garlic cloves--they give the soup so much flavor and make it a little creamy (after everything is pureed). This is a great idea for making soup out of any roasted vegetable, which means you can do all but ten minutes of the work in advance.
