blackened-tilapia. I replaced the salt in the recipe with Old Bay Seasoning, and I added 2 tbls. of Chef Paul Prudhomme's Blackened Redfish Magic seasoning. Everyone loved it! I would not make this recipe in any type of cookware except for a cast iron skillet due to the high temp needed to "blacken" the fish.
