Blueberry oatmeal pancakes. Use old fashioned oats, replace buttermilk with almond milk mixed with vinegar to sour the milk, replace flour with almond flour and use Truiva or another plan approved sweetener.
Oatmeal Cottage Cheese Pancakes. 3 whole eggs, 1 cup cottage cheese, 3/4 cup oats, 1/2 tsp cinnamon, 1 tsp vanilla, 1/2 tsp baking powder, 1/4 tsp salt. Blend all ingredients in blender and cook on griddle as you would cook any pancake...makes 8. Original recipe calls for flax meal and blueberries.
