Mix 1 pound steamed broccoi, 6 eggs, 3 C shredded cheddar, flour, C melted butter and 2 C cottage cheese. Place in casserole dish and bake at 350 for an hour or so, until light brown and not runny. Cool for minutes to let it set before serving.
This is one of my personal favorites. It is easy to make and an impressive soufflé. A wonderful side dish and great for holiday meals.
