Shrimp pasta with fresh tomatoes and spinach in a garlic butter sauce. An Italian comfort food spiced just right! Includes gluten free option (I tried this recipe with Tinkyada brown rice fettuccine - it was AMAZING!)
Freezer Meals: Baked Ziti- no meat. Doubled recipe to make three small rectangular freezer pans. Added about 3-4 tbsp fresh chopped parsley and 1/2 tsp smoked paprika to cheese mixture. Try adding a sauteed veggie layer next time. First attempt... One cup of sauce in bottom of pan, three to three and a half cups of brown pasta, one cup of cheese mixture, half cup of sauce. Top with grated parm and shredded mozz.
