Cut cauliflower into florets & cook in boiling water until tender about 10 minutes. Drain. Mash the cauliflower while still warm. Stir cheese, eggs, panko, cayenne & salt to taste. Coat the bottom of a griddle or skillet with olive oil over medium-high heat. Form the cauliflower mixture into patties about 3 inches across. Cook until golden brown & set, about 3 minutes per side.
1Head of califlower 2 lg. Eggs 1/2 c. Cheddar cheese 1/2 c. Panko bread crumbs Salt & pepper to taste Olive oil Boil califlower to tender and mash. Stir in all other ingredients and make patties. Put olive oil in skillet and cook til golden crust.
Cheesy Cauliflower Patties--Replacing potatoes with cauliflower is a great way to change things up and I thought I could take a recipe for potato cakes and do the same with cauliflower. It worked out great and everyone loved it.
