Scientists have found what they call a "metabolic fingerprint" that allows them to verify "real Kopi Luwak" (Indonesian for "civet coffee") using metabolomics technology, Eiichiro Fukusaki, a corresponding author of the study, says in an e-mail. The unique chemical fingerprint reflects higher levels of citric acid and malic acid as well as a certain inositol/pyroglutamic acid ratio.
Kopi luwak (Indonesian pronunciation: or civet coffee, refers to the beans of coffee berries once they have been eaten and excreted by the Asian palm civet (Paradoxurus hermaphroditus). The name is also used for marketing brewed coffee made from the beans. Producers of the coffee beans argue that the process may improve coffee through two mechanisms, selection and digestion. Passing through a civet's intestines the beans are then defecated with other fecal matter and collected.
