Chiles Rellenos - When I waitressed at a Mexican restaurant, they would make these from scratch and they were AMAZING. This is the closest recipe I have seen, but they kept the peppers in the fridge overnight.
Authentic Mexican Rice - as far as non sticky authentic taste goes, this recipe is easy & definitely spot on. Very important to toast the rice as it says, & using the Caldo de Tomate really helps a lot. I also added a bit more chicken base, & bought the caldo de tomate squares (cheaper) & used one square per cup of water.
Chuy's is one of our favorite TexMex restaurants! The closest location is 5 hours away though.. In a pinch, I make copycat recipe of their amazing jalapeno dip that comes out before your meal. Serve with tortilla chips and treat yo'self. This stuff is addicting!
