Fresh Corn Grits- copycat recipe of Zea Rotisserie Restaurant. We've had these often at Zea in ABQ, but I use white grits & always add 1 tsp of garlic powder & plenty of finely sliced scallions to make it taste even more like the real thing at Zea's. Those are omitted in this recipe, but they have them in the grits at Zea's ABQ.
Fresh corn grits. I made a simpler version of these on 6/9/13. I strained a can of creamed corn and added it to my usual two-serving grits recipe about halfway through the cooking. It had a nice touch of sweetness! We both enjoyed it!

Update 6-19-11: I prefer the use of 1/2 chicken stock and 1/2 water for cooking the grits. The usual amount reqired for 1 cup of grits is 3 cups of liquid. So that would be 1 1/2 cups stock plus 1 1/2 cups water.
