Thai Pineapple Fried Rice -- made this for lunch...hubby loved it. Said he would have loved it even without the shrimp. Great as is, though next time I may substitute my Thai red curry paste in place of the red chilies and curry powder just because Thai curries are paste based while Indian curries are powder based. Either way, this recipe is a winner!
