Jello Frosting: Such an easy and delicious frosting! 3 ounce pkg. of Jello (favorite flavor) 2/3 cup granulated sugar 1 egg white 1 teaspoon vanilla Place the above ingredients in a large GLASS OR METAL mixing bowl (OF A STAND MIXER). Turn the mixer on high just as you add ½ cup of boiling water. Whip on high for five minutes and VOILÀ!!!
This cake is gorgeous, AND I think it's the only vegan white cake I've ever seen. I always see vanilla yellow cake, but not a pearly white! It's more dense than a traditional white cake, but fluffy white cake made from scratch is a beast to get right. This is an easy recipe that is said to be very moist and flavorful!
ROYAL ICING: 1 egg white, 1 3/4 c powdered, sugar, 1 tsp water, food coloring (optional); Combine egg white and powdered sugar, and beat on low until well blended. Add water and mix until well blended. If icing is too thick, add water, drop by drop. If too thin, add a small amount of powdered sugar. Add food coloring, if desired. Icing will become stiffer with continued beating with mixer. Icing will harden on cookies
Coconut Cloud Cake-- I made this cake for my Mom's birthday and it turned out amazing! it's basically an angel food cake with light, fluffy egg white based frosting. Super yummy and with no butter or oil, low fat for sure!
White Angel Food Cupcakes: doubled the recipe (made 14 regular cupcakes). They tasted REALLY GOOD. But they sank in the middle. Not sure why, but next time I'll add a little more cream of tartar (used to add volume and stabilize whipped egg whites). Filled them with lemon butter instead of strawberries, but might try that next time too. JR 02-04-2016
