Just what I've been searching for: Instructions on preparing a 'Pie' or 'Sugar' pumpkin for baking. Goodbye canned pumpkin! This site has the pie recipe too (just in case you've relied on the can for the puree AND the recipe)
Libby's Pumpkin Pie *BUT, I add a pinch of nutmeg,use 1/2 cup white sugar and 1/4 cup brown sugar. I also do not add the entire 12 oz of evaporated milk (maybe 10 oz)... sets up nice and firm. Always get great reviews for my pie. And brush melted butter on pie crust (even if store bought). NOTE: my notes are for one pie, the photo of the recipe is for 2 pies!!
Homemade Fresh Pumpkin Pie. Made this with my grandchildren this weekend. It is good but I would add more pumpkin pie spice next time. Also, to get it smooth, use a blender to puree; a mixer isn't enough.
