Stuffed Baked Banana Peppers ~ this is a great recipe.  I do substitute for ground chicken and use half the rice it calls for.  Also, my band is finicky, so I pulse grate my onion and corn finer.  The green onions ~ so problem, as it is 'softer' in texture.  In addition, I add 2 Tbsp of greek yogurt and only 2 Tbsp of ketchup.  This recipe, you can change the stuffing to your liking.  What I like about this recipe, it's is baked and NOT fried!
