Hoe cakes are a type of fried, flat cornbread that look sort of like pancakes. They are perfect with dried beans (pinto, white, mixed), soups, greens, and stews because they are so good for what really country, southern people call...soppin.
Fried cornbread. Another recipe: 2 cups cornmeal. 1/4 teaspoon salt. 1/4 cup self rising flour. 1 cup water. 1/4 cup bacon drippings or cooking oil. 1/2 cup milk or buttermilk. 1 egg. Directions: Gently stir together all ingredients in a mixing bowl. Drop batter with a large spoon onto a hot, well greased skillet. Cook as you would for pancakes, turning to brown both sides. Serve with butter.
