Chicken Saltimbocca

This is one of my all-time favorite Chicken Saltimbocca recipes... It's beautiful as well as delicious-- and not too terribly difficult. The prep time always takes me a little bit longer than the recipe states but it's still a fairly easy to prepare recipe. I've served it with polenta, pasta, and as the main dish meat alongside a soup... It's always a hit~
