Gluten-free, dairy-free mini scones--these are delicious! I made my orange cranberry mini scones by adding orange zest to the dry ingredients and using dried cranberries for the fruit. After baked and fully cooled, mix 1/2 cup + 2 tablespoons confectioners' sugar with 4 teaspoons freshly squeezed orange juice and drizzle over the scones. Only 104 calories per scone.
