Churro Waffles - Did a re-make of this recipe using frozen waffles. I heated some oil in a skillet, cooked the waffles until slightly golden on both sides, then dipped in a cinnamon-sugar mixture (both sides). So good and easy!! The family loved them.

Tater Tot Nachos- made these tonight with 90/10 beef, added a bit of water to taco seasoning (2 tbsp). Made tater tots in casserole dish. didn't add enough cheese. use fresh salsa from local mexican market (added salsa and sour cream to individual plate- good for feeding kiddos) YUMMY!! and EASY!!!
