SOPA DE RES (Honduran Beef Soup) INGREDIENTS 2 lbs of Chuck roast 4 cups of water 3 cloves garlic 1 Onion 1 Bunch fresh Cilantro 1 lbs Carrots 1 lbs potatoes 1 lbs of YUCA 2 Celery ribs 2 lbs Corn 1 can beef broth 2 TBsp Annatto 2 Tsp Cumin 2 season goya 1 bay leaves 1 Caldo de res PREPARATION saucepan place the water along with the meat, garlic, onion, salt, bay leaves and cilantro. Cook for 2 hours or until meat tender. add Vegetables and the rest of spices.
Great, sweeter version of banana bread from Central America.Had to make this for an elementary school presentation and all of the kids loved it. Nice and moist bread. Pupusas: The most common Salvadoran dish! Corn dough filled with refried beens, pulled pork, mozzarella-like cheese or any combination of the above (revueltas). Diced squash or loroco (Fernaldia pandurata) are sometimes added with the cheese. Flattened and grilled. Served with curtido. No forks needed.
