Are you hosting a smaller Thanksgiving this year? Don't bother with a whole turkey — just roast a turkey breast! One half-breast or even a whole turkey breast makes more than enough for a small party of four to six. (And yes, you'll still have plenty of pan drippings to make gravy.) Turkey breasts are also a cinch to roast. No flipping, no basting, no fuss. Here's a recipe to show you how to do it, step by step.
How to reheat a whole precooked smoked turkey. Preheat oven to 325 degrees. Place turkey in a roasting pan w 1 cup of chicken broth. Brush with olive oil and cover tightly with aluminum foil. For a small turkey, 12-14lbs, bake about 1 1/2 to 2 hours, a large one 2 to 2 1/2 hours to heat. After 1 hour, baste with pan juices, recover with foil and bake for the remaining time or until the internal temperature reaches 150F. Let rest for 15 mins. Carve and enjoy!
