4 slices bacon, diced 3 cans whole kernel corn, drained 2 jalapenos, seeded and diced cup sour cream 1 cup shredded Pepper Jack cheese cup grated Parmesan cheese Kosher salt and freshly ground black pepper, to taste 8 ounces
Cowboy Corn Dip --- I would take half and refrigerate it and put the other half in a casserole dish and bake it at 350 for 35 min. Then you would have a hot and a cold of the same dip. Outstanding! Karen
Skip the mayo and sour cream and instead do cream cheese and a couple of spoonfuls of greek yogurt to get a nice consistency. Skip green onion, onion powder and garlic powder and go for the real thing. 1/2 an onion, sauteed, then a clove of garlic, sauteed until fragrant. Also rec a little bit more hot sauce/red pepper flakes. Finish with a sprinkle of smoked paprika on the top!
