We have the custom to hit and break open the lid of a sake barrel by a wooden mallet, which is known as Kagami Biraki (open the mirror) to celebrate happy events, such as weddings, store opening events, ritual events held at shrines, and so on.

Teriyaki sauce: 2 tbsp sake, ¼ cup mirin (sweet Japanese Rice wine), ¼ cup soy sauce, 2 tbsp light brown sugar, 2 tsp grated fresh ginger, 4 sliced spring onions, white part only. Whisk it all together and use as marinade or cook down for thicker sauce.
