Jonnycakes, a RI tradition: 1 cup white corn meal, 1 teaspoon sugar, ½ teaspoon salt, 1¼ - 1½ cups boiling water; Gradually add water to corn meal until consistancy is right to "plop" onto well oiled hot cast-iron or tephlon griddle (no aluminum); 1 spoonful per cake; leave cake undisturbed until it browns and becomes firm; cook both sides; serve with butter and maple syrup
