The other night I had left over pork loin and was looking for something quick that just wasen't nuking the pork loin so I took what I would have prepared for dinner and put it in one dish. It only took me like 5 minutes to put together and was on the table in 35 minutes.
Had some left over pork and was planning on making pork chop suey, but we had rice for the last two nights so I decided to make pork lo mein, but none of the recipes on Zaar really fit the ingredients that I had so I came up with this which is a variation of a couple of recipes I found here. Home made Pork Fried Rice. Leftover pork loin 1 onion 1/2 bag of frozen peas and carrots 2 cups rice 2 scrambled eggs Soy sauce Garlic powder Ground ginger Cook peas and carrots with onion and pork in 2 tablespoons butter. While that is cooking make the minute rice and scramble the eggs. When meat and veggies are done add rice eggs. Add soy sauce, garlic and ginger to taste. Enjoy
