Creamy Lettuce Soup Thanks to Julie and Julia, forgotten French classics like this one are being rediscovered. As a tip, remember that red leaves turn murky when they hit the heat, so stick with green lettuce when you're cooking. And start with a lot--lettuce shrinks!
This soup is a great way to use lettuce's outer leaves and ribs, which usually go to waste. Any kind of potato and any salad greens, including lettuce, arugula, spinach, and watercress, will work fine. LETTUCE SOUP: WHY NOT ADD ARUGULA?
Lettuce Soup... I think I'm actually intrigued enough to try this! (update: I did! Made with Bibb & Arugula and it was really great! I took it to the next level by pureeing some kabocha squash and swirling that (I'm coconut & dairy free, so the suggestions were out of the question) and garnishing with proscuitto.) NOM!
