Puffy Tacos - my favorite way to eat tacos! Only 5 ingredients - hamburger, taco seasoning, diced tomatoes and green chiles, cheese and puff pastry. Ready to eat in minutes!! Can make ahead of time and freeze for later. Great for tailgating and parties!
Taco seasoning: gluten, lactose, sugar and MSG free! (yes, all of those ingredients may be in the mix you're buying at the store.) Roast chicken in the oven at 350, cool, shred, reheat with one can of diced tomatoes and 2 Tbsp of seasoning per pound of meat. Simmer until liquid reduced by half. Voila! Chicken Tacos!
Excited to share tomorrow is Day one - round TWO of the 21 Day Fix Extreme. My first round was rough, I had amazing results the first week regardless of a few small cheats and one missed workout!!..... BUT the 2nd week I let life and stress get me off track and I'm really regretting that! Tomorrow is a new day one and I am so excited to commit to this program for the entire 21 days!! It's almost summer, time to get summer clothes ready!! ☀️
