Artichoke Thistle Or Cardoon (cynara cardunculus): Your plant is likely a C. cardunculus. It bears lovely purple thistle flowers in late spring/fall. Needs full sun and moderate water. Dead head flowers if you do not want it to re-seed. Wear protective gloves when handling as the plant has sharp spines/edges. Native to the Southwest Mediterranean and Morocco. Not a common garden edible. Used primarily in Italian cooking. Easily grows to 6-8' and is a perennial.
