8/10: Mediterranean feta dip - made this for Cooney's bday in office. VERY yummy! Made less than I imagined and was quickly gone. Paired with hummus and pita chips. Heated it in microwave since I didn't have an oven. Can't wait to try it again with an oven and with homemade crusties!

In the interim, I took 2 T Smart Balance w/1/2 T cinnamon and melted it in the microwave. Poured over oats and put back in oven for 5 minutes. I also leave the skin on the peaches - they carmelize and make it sweeter!
