Mexican Corn Bread Salad: Seriously yummy! I made the following substitutions/additions: used kidney beans, not pinto; doubled the mayo and sour cream, added chopped cilantro to it; added sliced avocado (dipped in lime juice to prevent browning) on top; sauteed the green onions in a bit of bacon grease. It was a BIG hit! Next time, I might only double the sour cream and leave the mayo at 1 cup, and sautee a whole bunch of green onions instead of just 6.
