Apricot lamb tagine. Despite the strong flavours in the sauce the taste of the lamb still came through and it really works well in this dish. Of course I served the lamb tagine on a bed of light and fluffy whole wheat couscous and I garnished it with some chopped cilantro and pistachios.
Harira (Moroccan lamb, tomato & lentil soup) An amazingly hearty and flavorful soup! I add carrots and anchovies when sautéing the onions for depth of flavor. I also usually sub lamb mergaza ( a spicy lamb sausage) for the lamb stew meat. Chicken thighs are a great alternative if you are not a lamb fan. Be sure to brown them before stewing to concentrate the favors.
