Shrimp ceviche - this is pretty much a staple as an appetizer that is my go-to for potlucks. So easy to make, healthy, and everyone enjoys. I buy the tub of little shrimp at Costco, some fresh pico de gallo, and lots of avocado (guacamole can work too). Then I mix all together with lime, and salt and lots of pepper. Delish!
