Bringing back these healthy Sweet Potato PB Protein Cookies!! 1 sweet potato, cooled & soft after roasting 1 egg 1/4 cup PBFit (powdered peanut butter from @BetterBodyFoods) 1/4 cup @TryAboutTime Vanilla Protein Powder (Use Code: HUNGRYBITES for 25%off at www.tryabouttime.com) 2 TB Natural Peanut Butter Process in the food processor. Then spoon cookies out into prepared baking sheet. Bake at 350 for around 12 minutes.
This PB2 Protein Shake is seriously yummy. Personally, I prefer my protein drinks/smoothies a bit slushier, so, if you're like me, I'd be sure to add frozen bananas, or at least some ice cubes when blending it. For bonus fiber, I tossed in about a teaspoon of flax meal. Variation option: if you want to go all chocolate-y with this one, you could use the PB2 w/chocolate, instead, and toss in some cacao, to get those bonus antioxidants!
My family has been baking these for years! They are a favorite for everyone and anyone; even made some with soy butter for someone with a peanut allergy and still a hit. Add butter to the chocolate and it will spread easier. Seriously delicious!!!
