Black pepper and Gruyere popovers --- I've made this recipe twice in two days after finding a popover pan at a thrift store. These are SO incredibly simple and they make you feel fancy... oh, and they're stupid delicious. (can be made in muffin tin tooooo)
One of nature's great wonders, popovers are made with just milk, eggs, and flour. Plus a little butter and sugar, if you're feeling sneaky. Whisk, pour into tins, and bake (no peeking!). A half hour later, you're rewarded with the most incredibly airy and crispy puffs you could ever imagine. Oh, and p.s., no popover tin required.
High-rising popovers. I put the pan in the oven to preheat without any oil or spray in it. Then, just before I fill it, I pull out the pan and use a stick of butter to grease each tin. Pour in batter, bake. Do NOT open the oven until the time is up. Fail proof.
