Stuffed mushrooms. I've been making these for over 20 years. That's how easy they are. I do a really pared down version of this. Saute Jimmy Dean sausage along with the chopped up stems from the mushrooms, mix with cream cheese, fill the caps and bake for about 15 minutes at 350 F. If you have a small rack to cook them on, the better as it lets the juices drain off so your mushrooms don't get soggy. EASY!
Portobello mushrooms are delicious and easy to stuff with almost anything. This is fast and easy to make! Rub portobellos with olive oil, salt, pepper, drop in egg, and other desired seasonings. Bake at 350F until egg white sets. (note, i use draining pan/rack when baking mushrooms b/c of excess moisture mushrooms release when baking)
