Beans & Greens 1) Saute diced med onion in OO til soft 2) Add 3ish cloves from garlic press, 30-60 sec 3) Add diced/sliced swiss char stems, then leaves 4) Add 4c Stock + 2c water 5) Add 2T tomato paste + 1T lemon juice 6) Add lg can white beans 7) Season with S&P & cayenne 8) Bring to boil for 10 minutes, reduce to simmer 9) Add baby spinach til just wilted 10) Serve w rustic croutons, fresh grated parm or spinkle with gorg.
ROASTED ROSEMARY LAMB WITH POTATOES: Make slits in 350g lamb neck fillet press in 2 sliced garlic cloves small sprigs of rosemary from 2 large sprigs. Lay 4 whole sprigs of rosemary on a large sheet of foil, place the lamb on top. Bring up the edges of foil to encase the lamb leaving the top open. Pour in the wine season. Place on a baking tray bake for 15 mins. (see comment for rest of recipe)
