This spicy crab casserole is a specialty of Sting-Ray's in Cape Charles, Virginia. Great baked until lightly browned and bubbling in the center and served hot with toast on the side. A winner in our house.
Ritzy Seafood Casserole : Crush 3 rolls (32 count) of Ritz crackers; mix with 1/2lb butter - melted. Cover bottom of 9x11 baking pan with 1/2 of the crumbs. Place 1.5lbs of seafood (scallops or lobster or crab or shrimp or white fish fillets) over crumbs. Combine two 10.5fl oz cans cream of shrimp soup, half a can of white wine and some hot sauce (to taste). Pour over seafood. Top with remaining crumbs. Bake 350deg 35min.
