Mom's Beef Jerky Recipe 1) Cut the meat into thin slices (if meat is slightly frozen, it cuts easier); approximately 6" by 1/4" or 1/2" strips (the thicker it is, the chewier). 2) Marinate for 12 hours in bowl, (stirring occasionally) in refrigerator 3) Drain meat. Line oven with tin foil to catch drips. Use cookie cooling racks on oven racks. Lay strips in single layer on racks. Turn electric oven on as low as possible (at 175*) leave door open slightly. Drying takes about 4-6 hours.
