Healthy Southwest Stuffed Red Peppers: MADE Great mixture. We prefer to use it over baked red potatoes. Red peppers tend to lose their flavor and taste like water when baked this way. Green peppers are slightly better. Makes a ton. I often freeze the extra for an easy freezer meal.
