Spanish Rice

This is how we Mexicans from California make our rice. We call it Spanish rice, not mexican rice! I didn't hear the term "mexican rice" until I moved to the midwest. This is how all of my family make the rice, aunts and grandmother alike. We don't put in peas or carrots like I have seen from other recipes. I was told by my sons girlfriend that I make it just like the restaurants. I hope that was a compliment!!

Mexican Red Rice (Arroz Rojo)

Spanish Rice 2 tbsp. vegetable oil 1 cup onion, minced 2 cloves garlic, minced 1 cup long grain rice 1 ¾ cup chicken broth (vegetable broth or water is good, too) ¼ cup tomato sauce ¼ cup chopped fresh cilantro 1tsp. dried oregano salt and pepper to taste (I used about 1 teaspoon of salt and about 1/4 tsp of pepper)

Best Mexican Rice Ever! I've tried 3 or 4 different mexican rice recipies and this one actually tastes like it could be from a mexican restaurant. It does take some time to prepare but it was worth it. Will definitely make again! - Chelsie

Spanish Rice

Made this tonight. Turned out great! Didn't have garlic salt so substituted with 1/2 tsp sea salt and 1/8 tsp minced garlic.
