This light Thai salad is perfect for summer evenings. Sweet, spicy and juicy, it looks impressive served within the shells of an iceberg lettuce and can satisfy as a healthy meal or a delicious Thai starter.
Miang Kham is a a thai starter, much like Indian pan actually… various condiments like peanuts, roasted coconut, birds eye chilli, ginger, lime and sweet and sour tamarind based of fish sauce based sweetner are served with beteel leaves (sometimes even lettuce which is what benjarong does or even the leaves of Chinese broccoli in some areas). The idea is to combine everything, fold it, pop in your mouth and wait for the burst of flavors which form the basis of Thai food
Thai prawn salad ... I added a grated carrot and sliced snow peas and some konjac noodles cut up. In the dressing I subbed stevia for the sugar and made up for not enough lime with cider vinegar. I used some romaine and baby spinach and added basil to the green mix, as well. Seriously delicious and healthy
