Vegan Cheese Quesadillas - these were great, especially with salsa on the side! My carnivore mother agreed. I used half a cup of some vegan nacho cheese id made instead of the 4 tbsp N. Yeast, which gave it some good spice and a nice texture.
These Avocado Chicken Salad Sandwiches are my favorite way to use leftover chicken! They are super easy, creamy, flavorful, refreshing and I love the Mexican spices and crunch of tortilla strips! via @carlsbadcraving
Pupusas are oh so yummy! This is one of my favorite authentic comfort foods. If they are anywhere near me. I will eat them breakfast, lunch, and dinner. The Pupusa is El Salvadors national dish, very similar to the Mexican gordita, and South American Arepa. Pupusas are traditionally served with curtido. http://www.thehomemadelife.com/papusas-a-salvadorian-delight/
