How To Make Tomato Paste

Homemade tomato paste is an entirely different — and utterly more delicious — beast than the kind you can buy at the supermarket. It takes about a day to make (happily, much of that work is hands off), and in the end, you'll have enough tomato paste to last you through several cooking projects. In my book, homemade is worth the effort, every time.

Homemade Tomato Paste | Conserva di Pomodori from Leite's Culinaria || Ingredients: 10 pounds very ripe plum or salad tomatoes + 1/4 cup kosher salt + 1 tablespoon extra-virgin olive oil for the baking sheet, plus more for topping off the jar


Freeze tablespoons of leftover Tomato Paste. Once frozen solid, transfer to a plastic bag and return to freezer. Pre-measured and ready for future recipes.
